Making mofongo at home isn’t difficult if you have all the right ingredients on hand! Here’s our easy-to-follow recipe:
1. Start by gathering up your ingredients: 4 cloves garlic (minced), 2 tablespoons olive oil, 3 large green plantains (peeled and sliced into ¼ inch thick pieces), 1 teaspoon salt & pepper mix (or to taste). You’ll also need a mortar & pestle for smashing the plantains once they’re cooked.
2 . Heat up some olive oil in a skillet over medium heat then add minced garlic until fragrant – about 30 seconds should do it! Add in your sliced plantsin pieces then season them lightly with salt & pepper before lowering heat to low/medium-low setting; cook for 10 minutes stirring occasionally until golden browned on both sides – transfer cooked plantsins to plate when done cooking and set aside while preparing remainder of mfogo ingredients
3 . Using mortar & pestle start smashing together cooked plantsins + minced garlic + remaining olive oil until desired consistency is reached – you want mixture slightly chunky not too smooth; adjust seasoning if necessary
4 . Serve warm topped off with crispy pork cracklings (chicharrones) or freshly chopped cilantro – enjoy!
